When I have backed up to external hard drive using McAfee all my pictures are not in named folders, why is that? It's hard to find the picture that I want. I am looking to install pictures to re install on my hard drive that I must have deleted. They are in my organizer but not my hard drive.

I don't use McAfee, but most backup programs have a "restore" feature that allows you to browse the contents. (Most backup programs don't write the files directly, or copy the directory structure - they encrypt and flatten.) Look in the help for "Restore" or "Recover".

Are you saying that you backed up your Organizer using the File>Backup command and they are not in named folders?
If so when you back up the Organizer it renames all of the files with it's own numbering system.
If the photos are in your organizer but not on your hard drive you will get the missing photo image and the Organizer will want you to reconnect.
I'm not sure if this helps at all.
